No, the joke is: shopkeepers get merchandise by mugging and killing adventurers. How else?

Lately I've been playing in explore mode and I'm constantly getting killed by shopkeepers who are "after you hide, not your money". I also found out that you can't genocide them :(

I think shopkeepers deliberately keep mimics in their shops to get more stuff to sell.

MimicThe ancestors of the modern day chameleon, these creatures can
assume the form of anything in their surroundings. They may
assume the shape of objects or dungeon features. Unlike the
chameleon though, which assumes the shape of another creature
and goes in hunt of food, the mimic waits patiently for its
meals to come in search of it.

's aren't that hard to kill, they're really slow. And Cord, if you've ever tried to kill a shopkeeperThese strange creatures live mostly on the surface of the
earth, gathering together in societies of various forms, but
occasionally a stray will descend into the depths and commit
mayhem among the dungeon residents who, naturally, often
resent the intrusion of such beasts. They are capable of
using weapons and magic, and it is even rumored that the
Wizard of Yendor is a member of this species.

The thing that shopkeepers have mimics to restock is actually VERY plausible... How else did the mimicThe ancestors of the modern day chameleon, these creatures can

Those sneaky shopkeeps!

I should train my dogA domestic animal, the _tame dog_ (_Canis familiaris_), of
which numerous breeds exist. The male is called a dog,
while the female is called a bitch. Because of its known
loyalty to man and gentleness with children, it is the
world's most popular domestic animal. It can easily be
trained to perform various tasks.
